  1. 8-10 dried lentil dumplings
  2. 1/4 tsp radhuni
  3. 1 tsp oil
  4. 1 potato cut to cubes
  5. 1 small eggplant
  6. 2 raw banana or plantain slightly peeled and cut to slices
  7. 4 drumsticks
  8. 1/2 piece raw papaya
  9. 2 bitter gourds sliced
  10. 1/3 cup milk
  11. 1 tsp grated ginger
  12. 1/2 tsp sugar
  13. 1 tsp ghee

Instructions to make to make Shukto Mishmash of vegetables

  1. Chop all the vegetables, preferably to similar size.
  2. Take a kadai or pan and add the oil to the pan. Now, heat the oil a bit and add the bori. Flip them after sometime else the bori will burn.
  3. After the bori is done, take them out from the pan and keep them aside.
  4. Now to the oil, add ¼ teaspoon of radhuni and let it splutter. You will start getting the smell of radhuni.
  5. Add the chopped vegetables in order of potato, raw banana, and drumstick. Stir them for a while and add the remaining vegetables.
  6. Stir them for about 2 minutes, add salt and about a cup of water. Cover and cook till all the vegetables are done.
  7. Add the milk along with 1/3 cup of water. Let it simmer.
  8. Meanwhile, make a paste of the remaining radhuni.
  9. As the shukto reaches your desired consistency lower the flame. Add the sugar, ghee, grated ginger and radhuni paste.
  10. Turn off the flame. Enjoy the shukto with steamed rice.
